Melting Almond Cookies - All ready for CNY perhaps???

"...Melting Almond Cookies..."


These are our regular yearly bakes that we will never missed.


I (even Hubby & the kids) loved these cookies very much as they are very delicious, what's more they are so easy to make. And best part is, it is soft and it melts in your mouth... 


Everyone have praises for these Almond Cookies.

Unlike the usual almond cookies which are coated with egg coatings on the top, these almond cookies are as original as they are.

I simply love its cracking surface. 


BUT BEWARE....

These cookies are dangerous... 

You can't stop eating them. You just want to pop more cookies, one after another...

 
ALMOND COOKIES
(Recipe as adapted, with modifications from Nonya Recipe Book by Chef Philip Chia)

Ingredients
75g icing sugar
250g self raising flour
1/4 tsp sea salt
70g almond powder
150ml canola oil
1 tsp vanilla essence

Method
1. Mix all dry ingredients into a big mixing bowl, combine well.
2. Add the vanilla essence and oil, and knead into a dough.
3. Pinch a teaspoon of dough and roll into a ball and flatten it slightly. Place the dough on a lined baking tray.
4. Bake in a preheated oven of 150°C for about 15-20 minutes. Allow to cool and store in an air-tight container.
